Zucchini Slaw
I want something summery. I don't want to cook it because it's already 5 million degrees in this kitchen. I want it to taste good, because, you know, kids. It should probably be healthy, too, because, you know, kids. I have a lot of veggies from the garden that I could use. If I eat another salad, though, I might turn into a rabbit.
This is my thinking process at 4 pm when I need to be fixing dinner. I frantically look around the kitchen to see what could go together and not taste like it could be mistaken for a "delicacy". In the summer, we have lots of zucchini and squash. Growing up, I knew of like three ways to fix these veggies. And out of the three, my family will eat one way of fixing zucchini with out complaints. It's not that they are picky, per se. It's more of the fact that they love food. Good food. And if they don't love it, why waste time on eating it. So I set to work on finding all the different and creative ways to fix squash and zucchini.
For this post, I bring you (trumpets please) Zucchini Slaw! This is a good one. So simple. You know that zucchini noodle thing you've been "wanting to try out", but just didn't have the right recipe? This is the right recipe. Or, you can do what I did and use the mandolin. You could even just cut your zucchini into tiny strips if you want. These noodle-y strips get tossed in with carrots, some seasoned rice vinegar, some soy sauce, and some seasonings and you got yourself one tasty little side dish. If you want to make it real fancy, you could even throw in some sesame seeds or some dried cranberries. Enjoy!
Zucchini Slaw
A tasty slaw that adds zing to your summer!
Ingredients
- 1 medium or about 2 cups Zucchini
- 1 cup Carrots
- 1 Tablespoons Seasoned Rice Vinegar
- 2 teaspoons Sugar
- to taste Salt and Pepper
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Sesame Seeds (optional)
Instructions
Mix up Vinegar, Sugar, Soy Sauce, Salt, and Pepper in a small bowl and set aside.Cut zucchini and carrots into thin strips. You can use a zucchini noodle maker, a mandolin, or a knife.Squeeze out all access moisture from zucchini and carrots and place into medium bowl.Pour dressing into zucchini mixture, add sesame seeds, and gently toss until combined.
